Asian chicken stock and Western chicken stock are not the same thing. Western chicken stock tends to contain: • Mirepoix (onion, carrot, celery) • Herbs (thyme, bay, parsley) • Designed to taste complete on its own Asian chicken stock is built for integration: • Clean chicken base • Minimal aromatics (ginger, scallion) or none • Designed to disappear into the dish, not sit on top of it When you use Western chicken stock in Asian cooking: • Herbs clash with soy, ginger, sesame • Finished food tas
