Wild plums are covered in wild yeast! The fruit of Prunus mexicana is ripening across Texas now. These fruit are generally too tart to eat raw but can be made into a delicious jam, jelly, or wine. The grayish powder on their surface is wild yeast that can be used to ferment the plum juice, creating a brew somewhere in the 3.5%-5% alcohol range. There is a bit of a range overlap of American plum (Prunus americana) and Chickasaw plum (Prunus angustifolia). American plum has more of a northern range and Chickasaw plum more of a souther range.Angustifolia, the species name for Chickasaw plum, means narrow-leaved which was one of the details we used to distinguish them! There are two studies which provide details for the vitamin C content of Diospyros virginiana (American Persimmon). The first is quite old (1942) and claims numbers ranging from 2500-3300mg/100g of vitamin c in fresh leaves.
